A Vegetarian Feast

By Shawna Polione

I married into a family of vegetarians, and when I hosted my first family get together I had no idea what kinds of foods to prepare. I spent hours and hours stressing, looking up recipes, trying to find something that everyone, including my meat-eating family could eat....and enjoy. The biggest problem was that at every family gathering my family has what we call "Teresa's beans," my aunt Teresa started this recipe, and no family gathering would be complete without them. Then it hit me, I'll make Teresa's beans, only vegetarian. To go along with the vegetarian beans, I made a green salad with a variety of dressings, a loaf of French bread, and a dessert. The recipe for these delicious beans is:
1 1/2 C. cooked lentils
1 16 oz can butter beans
1 16 oz can drained kidney beans
1 large can B & M baked beans ( Busch's vegetarian)
1/2 C. chopped onion
1/4 C ketchup
1/4 C. BBQ sauce
2 T. prepared mustard
2 T. molasses
1/2 t. salt
1/3 C. brown sugar
4 cooked Boca burgers in bite size pieces
1/4 C. sugar
1/2 t. chili powder.
Mix all ingredients together and bake at 350 degress for 1 hour or until desired thickness. As for dessert I mixed together a variety of in season fruit, chilled them in sperate serving dishes, and before serving them I topped it with chopped pecans and fat free whip cream. My entire family was plesed with the dishes, the beans were a hit, and my family didn't even know they weren't eating meat!
