Chicken Adobo

Adobo is the "unofficial" Philippine's national dish. Adobo means to "marinate" in Spanish and the dish can actually vary depending on the region or your location in the Philippines. It is a fairly simple dish to make and the recipe I would like to share with you all is my healthy version of this staple dish. This dish can be cooked with pork, beef, tofu, shrimp, and chicken. Filipinos believe that you can "adobo" any type of food as long as you marinate it with soy sauce.

What You Will Need:

3 lbs of chicken breast
1/2 cup of brown sugar- I used Organic brown sugar
1/2 cup of either white vinegar or apple vinegar
1/2 cup of soy sauce
5 cloves of garlic minced
1/8 tsp of peppercorn
2-3 bay leaves
Salt and pepper to tastLarge pot

How to cook:

1)Brown/grill the chicken breast first. I like to use my George Foreman grill to make it as healthy as possibly for my family.

2) Combine all the ingredients in a seal proof Tupperware and allow to marinate for at least 2 hours in the fridge.

3) Once your ingredients are done marinating, boil in a pot for at least 10 to 15 minutes, keep it covered and allow it to simmer for another 40-45 minutes.

4) Enjoy!! It is best served with rice, I like to enjoy mine over brown rice.

* You don't necessarily have to marinate the dish for two hours- if I don't have time I do it overnight, otherwise you can always just combine the ingredients together and start cooking- however I find that if you do marinate it before cooking,and you use meat other than chicken breast the meat just falls off the bone or is so tender it seems to
"melt" in your mouth.
