Fasting and Traditional foods in ethiopia

I was born and grew up in eastern Africa, in Ethiopia. In Ethiopia 50% of the population are orthodox Christians and in this religious tradition people believe in fasting. There are a lot of fasting seasons. In these seasons people aren’t allowed to eat any type of animal related product. Also it is the season when people (who are orthodox) consume a lot of vegetables, fruits and different kinds of beans. We have different traditional cuisine (fasting foods) which will be made specifically for these times of fasting. I will be giving some of the recipes for these traditional cuisines which are rich in plant protein and important vegetable nutrition.

Aleecha vegetable recipe

1 head cabbage cut into small pieces
¼ lb butter
2 large onions sliced
1 tablespoon curry powder
5 carrots cut in to small pieces
1 lb potatoes cut in to small pieces
½ head cauliflowers break in to pieces
1. Boil the cabbage until it softens. Fry onions in butter.
2. Add curry powder to the onions, and cook for 1 minute.
3. Add ½ cup water to the onion mixture. Cook for 5 min; add carrots and potatoes and cook for 15 min; add cauliflower and cook 5 min; add cabbage, cook for 15 min. It will be ready for serving. It can be served with brown rice. It typically eaten with enjera bread in Ethiopia.

My second recipe can be used as a salad
Miser selatta (salad)
Ingredients
¼ cups dried lentils
3 tablespoon red wine vinegar
2 tablespoon vegetable oil
1 teaspoon salt

8 large shallots peeled and cut into halves
2 fresh hot chili peppers cut, black pepper
Directions
1. Place the lentils in a sieve and wash by cold water then drop it into lightly salted boiling water to cover them by 2-3 inches of water.
2. Cook for 20-30 min until tender.
3. Drain and rinse under cold running water.
4. Mix vinegar, oil, salt, and a bit of pepper in a bowl and beat together with a whisk.
5. Mix everything together with the lentil and let it marinate at room temperature for 15-20 min. Stirring before serving.
