Galen's Egg-free Recipes

I have always enjoyed baking, but found out a year ago that my daughter is allergic to eggs. I have several recipes that I have adapted to accommodate my daughter's egg allergy. I made them a bit healthier by changing a few other ingredients while I was at it. Here are three of my favorites.
Egg-free Banana Bread


¾ cup sugar
½ cup melted butter
½ cup applesauce
3 very ripe bananas, frozen then thawed
1 teaspoon baking soda
½ teaspoon salt
1 ½ cup unbleached flour
¼ cup ground flax seed
¼ cup whole wheat flour

Preheat oven to 350 degrees. Spray/grease a large loaf pan with canola oil. Mix all dry ingredients in a large bowl. Mix liquid ingredients in a separate bowl, mashing bananas into the mixture. Combine wet and dry ingredients, mixing thoroughly. Pour into greased loaf pan, and bake for about an hour until top is firm and slightly browned. Cool, and enjoy!
Yummy Egg-free Chocolate Cake


1 ½ cups unbleached flour
1 cup sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 cup cold water
1/3 cup canola oil
1 tablespoon distilled white vinegar
1 teaspoon vanilla extract

Preheat oven to 350 degrees. Mix all dry ingredients together in a large bowl. In a separate bowl combine water, oil, vinegar, and vanilla. Grease 8 x 8 x 2 baking pan. Pour liquid ingredients into bowl containing dry ingredients and stir until mixed. Quickly pour into greased baking pan and bake approximately 30 minutes, until toothpick inserted in center comes out clean. Cool and serve sprinkled with a light dusting of powdered sugar.
Maya’s Oatmeal Cookies


½ cup melted butter 1 cup unbleached flour
½ cup canola oil ½ cup whole wheat flour
1 cup brown sugar 1 teaspoon baking soda
½ cup applesauce 1 teaspoon cinnamon
1 teaspoon vanilla ½ teaspoon salt
1 cup raisins 3 cups oats (not quick oats)

Preheat oven to 350 degrees. Mix flours, baking soda, oats, cinnamon, and salt in large bowl. In separate glass bowl, melt butter and add oil, brown sugar, applesauce, and vanilla. Pour liquids into dry ingredients and mix thoroughly. Stir in raisins. Use a teaspoon to drop balls of dough onto cookie sheet. Bake 10-12 minutes.
