Kitfo and Raw meat (Kurt) Ethiopian traditional food

The traditional Ethiopian meal has been served on a large platter that is draped with Injera bread, with the selection of foods. The dishes are prepared with a variety of unique spices which lead unforgettably striking dimensions to its exotic cookery. In fact, i will focus one of the famous dishes called Kitfo made by raw meat and i will discuss how to serve Kitfo, the nutritional value, and the side effect of eating raw meat. An interesting phenomenon among the food in Ethiopia is the love that the community has toward raw meat. In Ethiopian culture meat is considered a good food and one of the most sought after food items in the community. Even here in Seattle the Ethiopian community seems to follow the tradition. In fact, Tera Sega (raw meat) is prepared in various forms. Kitfo is one of the best traditional foods prepared with row meat. It is chopped beef which is freshly grounded just before serving. It served one of the three ways such as raw marinated in spices (mitimta) a spicy chili powder and butters (Kebbeh), warmed (lebleb) or fully cooked. Most people prefer uncooked meat (tera) to get the full experience of Ketfo. It is eaten by hand with injera or kocho. In fact, kitfo isn’t the only raw meet offered in Ethiopian cooking. There is also anther dish that is prepared with tera sega (raw meat) which is known as Kurt. Of course, the animal such as caw or ox should be freshly killed for both Kitfo and tera sega .In addition, there is a specific part of meat to make for those dishes. For example, for kitfo the meat should be red that doesn’t have any white (fat); on the other hand, for Kurt it could be red meat that has a white (fat). According to legends, Ethiopians started eating tery sega (raw meat) centuries ago, they started eating this way to hide from their enemies because if they use a fire to cook their food, the fire might reveal them where they are and the enemy could attack them. In addition raw meat (beef) contains major nutritional values and it is a rich source of Iron, phosphorus and zinc. “Beef is an excellent source of B vitamins, including niacin, vitamin B6, and Vitamin B12, which is found only in animal foods. Lean beef provides hemi iron, the organic iron that is about five times more useful to the body than non-hemi iron, the inorganic form of iron found in plant foods. Beef is also an excellent source of zinc”. The problem in this nutrition is the white meat fat. The fat is also considered highly and has been documented to be cause for various health problems in the community. In addition the way it is prepared in its various forms like (kitfo) with high cholesterol. A large quantity of butter is added, so the nutritional values diminish when it used often and becomes a health threat. Another side effect of eating raw meat is intestinal parasites such as tapeworm, and it is usually caused by contaminated water or food that is usually under cooked with beef or pork. Generally, Kitfo is held in high regard and considered a traditional ceremonial dish. It prepared with raw meat marinated in a spicy chili powder and butter. It is rich in major nutrition such as iron and B vitamins which is very important to our bodies. On the other hand, eating raw meat caused for various health problems such as intestinal parasites and if it used often a large quantity of butter with kitfo causes another health problems.
