Description of pineapples:
Pineapples are usually in an oval or cylindrical shape. They are surely juicy and fleshy if eaten in an opportune period of time. The ripe pineapples with rinds, tough and waxy, have various kinds of color, with dark green, orange-yellow, and reddish being the most common. Pineapples weight similarly to the other tropical fruits such as watermelon and durian, which are usually 5-10 pounds, or sometimes more. Their length may be up to 12 inches.

Pineapples are typically grown in the tropical or sub-tropical areas. So sunshine and 25-150 inches of annual precipitation is preferable. They are commonly found in South and Central America, Southern California and Florida, and South Asia. They can put up with the cold weather for a short time. If the areas of planting pineapples turn cold like a week, their growth will be ruined, the maturity will be delayed, and they will become more acid. The adaptability of pineapples depends on the cultivar or type (variety) of pineapple.

How to select, cut and prepare the pineapples:
We should choose the ripe and fresh pineapples that have a firm green leaves on its top (the top is called the "crown"). Avoid buying the pineapples that have brown and wilted leaves, because they are not fresh. The shell should be bright and will become yellow if left for a period of time. If you can smell the aroma that comes from the pineapples, then they are worth buying.

How pineapples are prepared in Hong Kong and Southern China:
Pineapple Fried Rice The Pineapple Fried Rice is a common dish in that it is delicious and healthy to our health by putting some onions and scallions in addition to pineapple. It can be carried with or without the shell of the pineapples when eating, but carrying with pineapple looks better and it usually comes with more rice and sometimes cooked and cut pineapples.

Recipes for Pineapple Fried Rice:
  • 1 pineapple (whole fresh with leaves)
  • 2 tbsp vegetable oil
  • 1 small onion finely chopped
  • 2 green chiles seeded and chopped
  • 1 cup lean pork, cut into small dice (8 ounces)
  • 1/2 cup cooked shelled shrimp or prawns (4 ounces)
  • 3-4 cups cooked cold rice
  • 1/4 cup roasted cashews (2 ounces)
  • 2 scallions chopped
  • 2 tbsp fish sauce (from Asian Market)
  • 1 tbsp soy sauce
  • 10-12 mint leaves shredded - for garnish
  • 2 red chiles, sliced into rounds - for garnish
  • 1 green chile, sliced into rounds - for garnish
Directions: 1. Cut the pineapple in half lenghways and remove the flesh from both halves by cutting round the inside the skin. Reserve the shells. You will need about 1/2 cup (4 oz) of fruit (keep the rest for dessert). 2. Heat the oil in a wok or large frying pan. Add the onion and chiles and stir-fry for about 3-5 minutes until softened.
