1 large fuji apple
1 bartlett pear
1 banana

1 crown broccoli
1 blood orange
1 red bell
pepper
1 small jicama
i small bunch cilantro
2 Tbsp honey or raw agave
2 Tbsp lime juice
1 Tbsp curry powder

*all ingredients should be organic when possible.


Chop all vegetables, fruits and herbs to desired size. Combine ingredients in large bowl and serve chilled. This salad is amazing and will last in your refrigerator for several days, so it can help take care of those daily servings!

marinated veggie wrap

whole grain tortillas
1 head lettuce
1 medium zucchini
1 bell pepper
1 crown broccoli
1 small red onion
1 cup diced firm tofu
1 cup diced cremini mushrooms
1 cup diced steamed beets
1 cup dried cranberries
1/2 cup feta or hard diced goat/sheep cheese
3/4 cup dressing or vinaigrette

*all ingredients should be organic when possible.

With this you may choose to lightly saute or steam the tofu, zucchini, onions, and mushrooms with some garlic. Either way, chop the tofu and all fruits and vegetables to desired size. add vinaigrette, cheese, and dried cranberries. Wrap in tortilla and enjoy!
