“Fasting and Traditional Foods in Ethiopia” by Agumas Addisu I was born and grew up in eastern Africa, in Ethiopia. In Ethiopia 50% of the population are orthodox Christians and in this religion people believe in fasting. There are a lot of fasting seasons. In these seasons people aren’t allowed to eat any type of animal related product. Also it is the season when people (who are orthodox) consume a lot of vegetables, fruit and different kinds of beans. We have different traditional cuisine (fasting foods) which will be made specifically for these times of fasting. I will be giving some of the recipes for these traditional cuisines which are rich in plant protein and important vegetable nutrition. Aleecha vegetable recipe 1 head cabbage cut in to small pieces ¼ lb butter 2 large onions sliced 1 tablespoon curry powder 5carrots cut in to small pieces 1 lb potatoes cut in to small pieces ½ head cauliflowers break in to pieces Stapes 1. Boil the cabbage until softens. Fry onions in butter. 2. Add curry powder cook for 1minute. 3. Add ½ cup water to the onion mixture. Cook for 5 min add carrots and potatoes and cook for 15 min add cauliflower cook 5 min add cabbage, cook for 15 min. It will be ready for serving. It can be served with brown rice. This food typically eaten with enjera bread in Ethiopia. Calories Dietary fiber 237 Protein 12g Sodium 5g Potassium 938g My second recipe can be used as a salad Miser selatta (salad) Ingredients ¼ cups dried lentils 3 tablespoon red wine vinegar 2 tablespoon vegetable oil 1 teaspoon salt 8 large shallots peeled and cut into halves 2 fresh hot chili peppers cute, black peeper Direction 1. Place the lentils in sieve and wash by cold water then drop it in to lightly salted boiling water to cover them by 2-3 inches of water. 2. Cook for 20-30 min until tender. 3. Drain and rinse under cold running water. 4. Mix vinegar, oil, salt, and bit of peeper in a bowl and beat together with whisk. 5. Mix everything together with the lentil and let marinated at room temperature for 15-20 min. Stirring before serving.
